Vegan Spaghetti Squash Recipe
This recipe is the same as my previous spaghetti squash recipe, but with homemade vegan cheese.
Cheesy Vegan Spaghetti Squash Recipe

This is the vegan version of my prior spaghetti squash recipe. Same ingredients, but using cashew cream instead of cheese.
Ingredients
Cashew Cream
- 1 Cup Cashew
- 1/2 Cup Nutritional Yeast
- 1/2 Tsp Soy Sauce
- 1 Lemons
- 1/2 Cup Water
- 1/4 Tsp Garlic Powder
- Salt and Pepper
Instructions
- Soak cashew for a few hours or overnight.
- Blend all ingredients until smooth and creamy.
- For the spaghetti squash, follow this recipe, and add cashew cream instead of cheese. You won't need to use all of the cashew cream. A little more than half is enough. You can save the rest as a base for salad dressing.
- Don't forget the hemp seeds! I forgot them this time and added them later. They really add extra nutrition, texture, and flavor.
Notes
I'm not the biggest fan of using cashews often, but here and there it's a great way to make vegan cheese and creamy sauces.
