Roasted Potatoes w/ Turnip Greens Recipe
Take the turnip salad recipe up a notch, and enjoy your turnip greens with it. Adding roasted potatoes hot over the bed of greens, and a little salad on top. This is a dish that feels well balanced, and enjoyable. You might be surprised how much you enjoy the turnip greens.
Roasted Potatoes w/ Turnip Greens Recipe

I absolutely love roasted potatoes with turnips greens. Adding some of the turnip salad in the previous post, works really well. There's something very balancing about all this put together.
Ingredients
- 1 Pound of Potatoes
- 1 Bunch Turnip Greens
- Turnip Salad
- 1 Tsp. Sherry Vinegar
- 1 Tbsp. Pumpkin Seed Oil
- Lemon or Black Pepper
- Avocado Oil
Instructions
- Preheat the oven to 400 degrees. Cut the potatoes into small chunks, and lay them out on a baking sheet with parchment paper. Drizzle avocado oil on top and mix the potatoes, so that it coats evenly. Sprinkle lemon pepper or black pepper all over.
- Bake until cooked through and crispy on the outside, about 30 minutes.
- Meanwhile wash and dry the turnip greens. Place them in a salad bowl.
- Mix vinegar and oil well in a little bowl. Drizzle it all over the greens.
- Pour the hot potatoes over the top of the greens.
- Then add the turnip salad on top.
Notes
If you're using the turnip salad with this recipe, you don't need to add any more salt, otherwise sprinkle a little on the potatoes if you like.
