Daikon Radish, Quick Pickles Recipe

Quick Pickled Daikon Radish
A fun and easy snack to make.

Ingredients
- 1 Bunch Daikon Radish
- 3/4 Cup Filtered or Spring Water
- 3/4 Cup White or Rice Vinegar
- 1 Tsp. Fine Sea Salt
- 1 Tsp. Black Peppercorns
- 1 Tsp. Mustard Seeds
- 10 thin Slices of Ginger
- a Few strands of Cilantro
- 1 Pepper (I used espelette)
- 32 oz Glass Mason Jar
- A Few Rainbow Carrots
Instructions
- Slice the daikon radish lengthwise into snack size matchsticks. Trying to get them all about the same size.
- Slice about 3 rainbow carrots lengthwise, in half.
- Add peppercorns and mustard seeds to a small pot and toast it a little on low heat. Then pour in the water, vinegar, and salt. Bring the brine to a simmer, stirring the salt, to dissolve it.
- Take a clean, 32 oz, mason jar. Pack the stocks of radish, while placing the other flavors in between. Cilantro, pepper slices, and ginger. Add some rainbow carrots if you want to.
- Pack the jar well. I added a few half size sticks on the top of everything, so that I could fill the jar, since the matchsticks are shorter than the jar.
- Pour the hot brine with everything in the pot, into the jar, and close the lid.
Notes
This should last a few weeks at least.
Don't use apple cider vinegar. It really doesn't taste good with pickles.
