Steamed Artichoke w/Sauce Recipe

Steamed Artichokes with Sauce
Yield: 1-2
A simple and tasty sauce for artichoke dip.
Ingredients
Sauce
- 3 Parts Mayo
- 1 Part Mustard
- 1 Lemon Slice
- Cayenne Pepper
- A Few Cloves of Garlic
- 2 Artichokes
- Water
- Lemon
- Olive Oil
- Salt
- Garlic
Instructions

- Mix the mayo and mustard in a small mixing bowl. Then add lemon juice and mix.
- Pour the sauce into a small serving bowl, and add a dash of cayenne pepper.
- Chop garlic into little tiny nuggets and sauté with a little oil until they're crispy. Add it to the sauce.
Steamed Artichokes
- Slice the stem of the artichoke so that it stands up flat in a medium sized pot or steamer. In a pot you'll only need about two inches of water. You don't want to add too much or it will evaporate and burn. However if you add too much water the artichokes becomes watery inside the leaves. Just make sure to check on it half way through the cooking time to see if it needs more water.
- In the water add a slice of lemon and a little olive oil and salt.
- Bring to a boil, and then turn down the heat, and simmer, covered. Small chokes will take about half an hour, more or less for bigger or smaller ones. You'll know when it's ready if you take a pair of tongs and you can pull out a leaf easily.
