Sautéd Fennel with Hemp Seed Sauce Recipe

I do my best to get as much plant protein as I can. This recipe is protein rich using hemp seeds. You can also add beans, lentils, or wild rice to it!

Sautéd Fennel w/ Hemp Seed Sauce

This flavorful fennel sauté is a plant based protein rich recipe, using hemp seeds as a sauce base.

Ingredients

Hemp Seed Sauce
  • 1 Cup Hemp Seeds
  • 1/2 Cup Water
  • 1/4 Cup Olive Oil
  • 1/4 Cup Lemon Juice
  • Parsley
  • 1-2 Artichoke Hearts (cooked)
  • 1/2 Jalapeno
  • 1/2 Cup Parmesan Cheese or 2 tbsp. Nutritional Yeast
  • 1 Bulb of Fennel
  • Avocado Oil
  • Garnishes of lemon rind, hemp seeds, chili flakes, crispy garlic, red onion....

Instructions

Hemp Seed Sauce
  1. Blend all Ingredients in a blender. (Use about 1/4 bunch of parsley, more or less. It's also ok to not use artichoke hearts, it's just an added benefit.)
  1. Sauté sliced fennel in a pan on medium heat with a healthy cooking oil like organic avocado oil. Cook for about 10 minutes, until it's cooked through, and brown around the edges.
  2. Plate the sauce, and pickup the fennel with tongs. Add on top. Then add garnishes.
