Sautéd Fennel with Hemp Seed Sauce Recipe
I do my best to get as much plant protein as I can. This recipe is protein rich using hemp seeds. You can also add beans, lentils, or wild rice to it!

Sautéd Fennel w/ Hemp Seed Sauce

This flavorful fennel sauté is a plant based protein rich recipe, using hemp seeds as a sauce base.
Ingredients
Hemp Seed Sauce
- 1 Cup Hemp Seeds
- 1/2 Cup Water
- 1/4 Cup Olive Oil
- 1/4 Cup Lemon Juice
- Parsley
- 1-2 Artichoke Hearts (cooked)
- 1/2 Jalapeno
- 1/2 Cup Parmesan Cheese or 2 tbsp. Nutritional Yeast
- 1 Bulb of Fennel
- Avocado Oil
- Garnishes of lemon rind, hemp seeds, chili flakes, crispy garlic, red onion....
Instructions
Hemp Seed Sauce
- Blend all Ingredients in a blender. (Use about 1/4 bunch of parsley, more or less. It's also ok to not use artichoke hearts, it's just an added benefit.)
- Sauté sliced fennel in a pan on medium heat with a healthy cooking oil like organic avocado oil. Cook for about 10 minutes, until it's cooked through, and brown around the edges.
- Plate the sauce, and pickup the fennel with tongs. Add on top. Then add garnishes.
