Spinach Sauce Recipe
I wrote two versions of this, because I like them both for different reasons. Version #1 is good if you just want a simple spinach sauce. It’s a refreshing flavor, and enjoyably nourishing. Version #2 is good if you want to add extra protein and you don’t eat meat, or just aren’t in the mood for meat.

Spinach Sauce
Two example for an easy spinach sauce that you can use for pasta or other ways.

Ingredients
Spinach Sauce Version #1, Basic
- 1 Bunch of Spinach or (a 1/4 pound loose)
- 2 Tbsp. Olive Oil
- 1/4 Cup Parmesan (or 2 tbsp. nutritional yeast)
- Juice of 1/2 a Lemon
- 1 Clove Garlic
- Sea Salt
- Black Pepper
Spinach Sauce Version #2, With Vegan Protein
- 6 oz High Protein Firm Tofu
- 1 Bunch or 1/4 lb Spinach
- Juice of Half a Lemon
- 1 Tbsp Lemon Rind
- 1/4 Cup English Peas
- 1/4 Cup Olive Oil
- 1/4 Tsp Chili Flakes
- 4-5 Sun Dried Tomatoes
- 2 Tbsp Nutritional Yeast
- Black Pepper
Instructions
- Wash the spinach.
- Blend all Ingredients until smooth.
- For the version with tofu, add a little bit of water while you blend it, and cook the peas before blending, if you're using fresh ones.
