Beets and Garlic Mayo Recipe
Beets are a super healthy vegetable and, it’s a good idea to add them to your diet more often. They’re said to help fight inflammation, good for digestive health, and can even support athletic performance and brain health. There are many ways to make them enjoyable to eat too.
This week we have rainbow beets, so you’ll have the fun of various colors. My beets were a mix of white and “candy striped”.

Beets and Garlic Mayo
The simplest way to to enjoy beets with garlic mayo sauce.
Ingredients
- 1 Bunch of Beets (any color)
- A scoop of mayo (vegan or primal kitchen mayo)
- Garlic Cloves
- Healthy Cooking Oil
Instructions
- Slice the ends of the beets and rinse them.
- Place the beets in a pot of water in a medium size pot. Heat it up to a boil, and then turn the heat down to a simmer. Simmer for 20-30 minutes.
- Place the beets in cold water and slip the skin off of the beets with your hands.
- Slice beets.
- Sauté diced garlic cloves until they're golden brown and crispy but soft on the inside. Take a spoonful of mayonnaise into a sauce bowl, and add the crispy garlic, stirring it in. You can also add some fresh thyme.
- Mix your beets with various greens and fresh herbs. You can also add wild rice!
