Celery Salad

Ingredients: Celery, Parsley, Bell Pepper, Tangerine, Lemon, Olive Oil, Salt and Pepper. You can also add apples to this.

Slice the celery, and leave the leaves out of this one. Save the leaves for making broth, it’s so good for you!

Chop the parsley. I only used a little more than half the bunch of parsley.

Slice the bell pepper.

Mix it all together and pour about 1/8 of a cup of olive oil. Squeeze the citrus juices, and add salt and pepper.

This will last in the fridge a few days and is one of my favorite things to eat in the morning. It’s refreshing, crunchy, and super healthy.
