Baba Ganoush Recipe w/ Pomegranate & Orange

Baba Ganoush Recipe
It's the first week we start to see Fall fruit, and today we're celebrating the pomegranate. We have eggplant, pomegranate, and oranges. Which is a great combination for a flavorful Baba Ganoush!
Ingredients
- 1 Eggplant or 1 Pound
- 2 Tbsp. Sesame Tahini
- 1 Small Tomato, or 4 Mountain Magic Tomatoes (sliced)
- 1 Tbsp. Olive Oil
- 1 Tbsp. Avocado Oil
- 1 Pomegranate (to make pomegranate molasses)
- 1 Orange
- 2 Tbsp. Organic Créme Fraîche (optional)
- 1/4 Tsp. Dried Pepper, like Aleppo (or a couple slices of fresh pepper)
- 1/4 Tsp. Smoked Paprika
- Sea Salt
Instructions
- For the pomegranate molasses, refer to this post.
- Cut the eggplant into pieces, and put them in a bowl, sprinkling salt on top. Let it sit while you prepare other ingredients.
- Preheat the oven to 350 degrees.
- Rinse the eggplant, and put it in a baking dish. Drizzle some avocado oil, and mix. Bake for 25 minutes, then turn the heat up to 400 and bake 5 more minutes.
- You'll end up with a spoonful of pomegranate molasses if you make it on your own.
- Blend all ingredients. The tomato will go in raw, not cooked.
Notes
The orange is for the molasses, but if you're not making it, just add a little juice of an orange to the mix.
You can also add some orange rind.
