Stuffed Delicata Squash Recipe

Stuffed Delicata Squash Recipe
A simple, warm, and nourishing dish with delicata squash. Delicata squash is tender in texture and flavor, making it a nice squash to stuff as you scoop a little bit of squash along with rice.
Ingredients
- 2 Small Delicata Squash
- Avocado Oil
- Jasmine Rice
- Parsley
- 2 Carrots
- 1/4 Onion
- Chili Flakes
- Nutritional Yeast
- Hazelnuts
Instructions
- You can prepare rice the day before and heat it up or cook it the same time. I like to have some things ready in advance, so I made the rice the day before, and I made two cups, since I'll use the rest of the rice for other things later.
- Make rice according to package instructions. One cup of dry rice should be enough.
- Once the rice is cooked, sauté diced carrots and chopped onions. Add peas if you have them. Once cooked, add the rice to the pan, and mix.
- Add freshly chopped parsley and mix with the rice.
- Preheat the oven to 400 degrees.
- Slice the tips off of the delicata squash so that the ends are flat. Then stand it up straight and slice through the center.
- Spoon out the seeds of the squashes.
- lightly coat the insides with avocado oil. Then flip the squashes over and place them flat down on a baking dish.
- Bake for about 25 minutes, and remove the dish from the oven.
- Turn them over and add warm rice to the insides of each squash half. Then chop and toast up some hazelnuts and spinkle them on top. Add a few sliced cherry tomatoes, and sprinkle with nutritional yeast and chili flakes.
