Sweet Potato Soup Recipe w/ Black Tahini
When I heard about the health benefits of sweet potatoes with tahini drizzled on top, I was perplexed at the idea of how it’s prepared, and encouraged to find a better way to enjoy it. Excited about the health benefits, I took the concept and made it into soup. This soup feels like eating ice cream. With the benefit of sipping on something warm, and nourishing.
This is also a nice time of season to enjoy sweet potato with citrus.

Sweet Potato Soup w/Black Tahini Drizzle
A healthy and nourishing soup that feels like enjoying ice cream.
Ingredients
- 1 lb Sweet Potatoes (any variety)
- 2 Parsnips or Carrots
- 1/2 Onion
- 2-3 Garlic
- 4 Cups Water
- 1/4 Tsp. Salt
- 1/4 Tsp. Paprika
- Big Spoonful of Black Tahini
- Orange or Tangerine Rind
- Rosemary Flowers
Instructions
- Shave the skin of the sweet potatoes, cut them into chunks, and rinse them. Skin and chop parsnips or carrots about the same size as you do the potatoes.
- Sauté chopped onions and garlic in a little oil, until fragrant. Add the sweet potatoes, parsnips, salt, and paprika. Let it sweat a couple of minutes, then add 2 cups of water. Simmer, until the potatoes are cooked through.
- Blend all ingredients with 2 more cups of water, more or less depending on your texture preference.
- Pour the soup into bowls, and go crazy with the black tahini.
- Add some fresh citrus rind on top. Any type of orange or tangerine variety works great.
- If you can find rosemary, lavender, or orange blossoms, to put on top, it’s extra fun. It’s kind of like having ice cream!
