Sugar Snap Pea “Hummus” Dip Recipe

This dip is like a hummus, but not quite. For those of you who prefer peas over garbanzo beans, this is an excellent dip.

Snap Pea "Hummus" Dip Recipe

A healthy and tasty way to enjoy the health benefits of snap peas.

Ingredients

  • 1/2 lb or 1 basket of Sugar Snap Peas
  • 1/2 an Avocado
  • 1/2 a Lemon (about 1 tbsp.)
  • 1 Tbsp. Pumpkin Seed Oil
  • 3 Tbsps. Fresh Parsley
  • 1/2 Tsp. Mild Pepper Flakes
  • 2 Pinches of Salt
  • Add Spring Onions, Seeds or Nuts, Parsley, or Sliced Red Onions for Garnish

Instructions

  1. Simmer the peas in an inch of water for about 1 minute. They don’t need to be all the way soft. You want them fresh, but a little bit steamed.
  2. Drain the peas and let them cool.
  3. Pulse them in a food processor with lemon juice, avocado, and salt, until you get the desired consistency. Then add the parsley leaves and pepper flakes, and continue to pulse.

Notes

The consistency is somewhat like a cloud, it’s soft. I don’t like to put a whole avocado or it becomes more like pea guacamole. If you don’t have a ripe avocado and you want to make pea hummus, try it without or add a little tahini.
