Agretti Pasta Recipe w/ Pumpkin Seed Oil
This is a fun way to use sautéed agretti! Since the agretti is coming from the desert at County Line Harvest, it’s naturally salty. Taste first before adding salt.

Ingredients
- Cooked Pasta (whatever type you like)
- 1 Bunch or 1/4 to a 1/2 pound of Agretti
- A Small Handful of Pumpkin Seeds (just pick some up in your hand, it's about enough.
- 1/4 cup to 1/2 cup Organic Pumpkin Seed Oil
- Salt, Pepper, Chili Flakes, Garnishes
Instructions
- Use any pasta you like. I usually prefer a type of long skinny pasta with agretti. This time I used bow tie pasta for it's fun colors made with vegetables. Cook the pasta as you normally would.
- Depending how much pasta you're using, take 1/4 cup to 1/2 cup of pumpkin seed oil (or olive oil), and a handful of pumpkin seeds. Chop up the seeds with the oil, either in a blender or food processor. Alternatively, you could chop the seeds by hand and add them to the oil. I just like the way the oil turns green when I use a blender. The bits will be chopped in different sizes.
- Sauté the agretti with a little avocado oil on medium/low heat, for about 10-12 minutes. Don't add salt yet, the agretti will naturally be salty. Add more oil if needed, and add chopped garlic if you like.
- Drizzle your pasta with the pumpkin seed and oil mixture, and top it off with the agretti. Add spices, fresh herbs, and other garnishes. You can also add parmesan cheese or nutritional yeast.
Notes
This is a lot of fun, but if you're not in a pasta mood, just sauté the agretti on it's own. It's wonderful.
