Steamed Artichoke w/ Sauce Recipe
If I had to live off of one vegetable it would be artichokes! Delicious, fun to eat, and fulfilling. Plus dipping it in your favorite sauce makes it a wonderful experience!

This is an easy and yummy sauce that makes enjoying an artichoke even more wonderful.
Ingredients
The Sauce
- 3 tbsp. Mayonnaise
- 1 tbsp. Mustard
- 1 tsp. Sriracha Sauce (or a portion of hot sauce, I found a good organic fermented one)
- Juice from half a lemon
- 2-4 cloves of garlic
- 1 tsp. toasted fennel seeds
- Paprika
Instructions
Steaming the Artichoke
- Slice off the stem of the artichoke. The stem is great, however it will cook more evenly when the artichoke stands upright. You can steam it in a steamer basket with water in the pot, or you can place the artichoke in a pot directly in a couple inches of water. (Both methods with the lid on, and the heat down until it's simmering.) If you put it straight in the pot, just be sure not to add too much water or the artichoke will come out watery. In this case you'll want to check the water after 20 minutes, and add some more. Make sure to set a timer or you'll start to smell a burned pot. Overall it takes about 45 minutes, sometimes longer. If you pull a leaf out and it comes out easily, it's ready!
The Sauce
- Chop up the garlic in pieces and sauté in a little bit of oil until the garlic is lightly golden crispy. Let it cool.
- Stir together the mayo and mustard, then the lemon juice. Then mix in the crispy garlic.
- Top off the sauce with other flavors you like. Sometimes I like to add freshly toasted fennel seeds and paprika. Black pepper is good enough too. A little fresh parsley it great as well.
Notes
You can slice the tips off of the artichoke or leave them as is. It's up to you.
