Spigarello Salad w/ Avocado Cream

- 2 Bunches Spigarello
- Hemp Seeds
- Spirulina
- Carrots
- Radish
Dressing
- 1/2 an Avocado
- 1 bunch Cilantro
- 1 Lemon (1/4 cup juice)
- 1-2 Limes
- 1/3 Cup Olive Oil
- 1/3 Cup Avocado Oil
- 1 Clove Garlic
- Sea Salt
- Chili Flakes
Instructions
- Cut and discard the bottom stems of the spigarello or save them to make broth. Wash and dry the leaves. Don't slice the stem out of the center of the leaf.
- Put the clean leaves into a salad bowl. Pour the olive oil over the top. Massage the leaves.
- Dress the spigarello with the avocado cream, then dust a little bit of spirulina on top. Top the salad off with hemp seeds, carrots, and radishes.
Avocado Cream Dressing
- With a handheld lemon squeezer, juice 1 lemon, about 1/4 cup. Juice 1-2 limes, depending on your preference. Or juice another half of a lemon.
- Smash the clove of garlic and remove the skin. Blend all the dressing ingredients until smooth. Be careful not to blend it so long that it heats up, in order to keep it creamy.
