This salad is easily adjustable to your preferences. The main idea is to enjoy these two crunchy and delicious veggies together.
Ingredients
Main Ingredients
- 1/2 head small Red Cabbage
- 1 head medium size fennel
- A little bit of cilantro or parsley
- Olive Oil
- Lemon or Lime
Dressing
- 1 Lemon or Lime
- 2 tablespoons sesame seed oil
- 2 teaspoons mustard
- 1/2 tsp honey
- 2 cloves garlic
- 1/2 tsp rice vinegar
- 1/4 tsp hot sauce
- About 1 teaspoon sesame seed
- 1/2 teaspoon soy sauce
- A little olive oil
Instructions
Veggies
- Slice the fennel with a mandoline. It's best to keep it at a low setting so that it's very thin. Place the fennel in a bowl, and squeeze 1/2 a lemon on top, sprinkle salt, add a little olive oil, and massage the fennel. Then set aside.
- Shave the red cabbage nice and thin. Use the same method with the fennel w/ some lemon, salt and olive oil.
- Plate the veggies side by side.
- Pour the dressing over the top of the cabbage.
- Add more lemon juice to the fennel, and other flavors like parsley, or cilantro, black pepper, shaved onions, etc.
- (Optional) sprinkle nutritional yeast on top.
Dressing
- Smash and dice the garlic, then sauté with a little olive oil. On the other side of the pan, (you'll have plenty of space even in a small pan) toast the sesame seeds without oil. Once the ingredients are light brown, pour them into a little bowl
- Mix 1/2 a lemon and the rest of the dressing ingredients.
Notes
Have fun with this, no need to stick to the exact measurements here. Work with what you have.
