Roasted Potatoes with Tzatziki

Ingredients
Roasted Potatoes
- Potatoes cut in small chunks
- Sliced Cucumber
- Salt and Pepper
- Za'atar Seasoning
- Avocado Oil
Tzatziki Sauce
- 1 Cup of Greek Yogurt or Coconut Yogurt
- 1 Cucumber, Sliced thin then cut in quarters
- 2 Tbsp. Fresh Dill
- 1 Tsp. Red Wine Vinegar or Lemon Juice
- 1 Tsp. Olive Oil
- 1/4 Tsp. Sea Salt
- 1/2 Tsp. Sumac Powder
Instructions
Roasted Potatoes
- Wash the potatoes and keep the skin on. Cut them into small chunks, doing your best to keep them similar sizes.
- Squeeze the juices out of the potato chunks using a towel or paper towel.
- Toss the potatoes in a bowl with some avocado oil, and coat them evenly.
- Sprinkle some salt, and bake at 425 degrees for 30 minutes.
- Once they're cooked through and a little brown on the edges, sprinkle some Za'atar seasoning and toss.
- Place them in a bowl or plate, and add some fresh cucumber slices. Then dip with Tzatziki.
Tzatziki Sauce
- Mix all ingredients.
- I also added a little purslane from the garden. Mix in any other herbs you like. Add more cucumbers and dill, or use fresh basil or parsley. Dried herbs are ok too. Add more lemon juice if needed.
