Delicata squash is more delicate than other Winter Squashes. It's fun and easy to prepare. Just like this recipe, topped with a leek sauce.
Ingredients
Baked Delicata
- 2 Delicata Squash
- Healthy Cooking Oil
- Sea Salt
- Paprika
- Toasted and flavored pumpkin seeds
The Sauce
- 1 Stalk of a Leek, green parts included
- 2 Lemons (freshly juiced)
- 3 Tablespoons of Olive Oil
- 2 Tablespoons of quality Sour Cream
Instructions
Baked Delicata
- Preheat oven to 400 degrees farenheit.
- Slice the tip of the squash, and start to spoon out the seeds and messy bits. This is easier to do when the squash is whole, before you slice it. Once you're about half way down, slice pieces about an inch thick. After a few slices, spoon out the rest of the seeds, and finish slicing the pieces.
- Spread them out on a baking dish and brush the squash with oil. Sprinkle with salt, and bake for 20 minutes. Flip them over and bake for about 7 minutes more.
Sauce
- Sauté the leeks in a pan until they're soft. Then blend all sauce ingredients.
Putting it Together
- Place the squash on top of a bed of greens like chicories or arugula.
- Pour the sauce on top, and sprinkle some paprika, along with some toasted and flavored pumpkin seeds.
Notes
There's no need to shave the skin of this squash. If you don't want to eat the skin, you can scrape it off after it's cooked, more easily, than if you shave it.
If you are in need of an ingredient place of leeks, you can also use spring onions, parsley, or anything green you think will work. They don't have to be sautéed.
If you are vegan and don't want to use vegan sour cream, soak some cashews for about an hour and blend it instead of sour cream. Add a little water to the sauce to get the right consistency.
