A nice creamy sauce, using the whole leek, giving it a nice light green color that goes nicely with any type of cauliflower.
Ingredients
Roasted Cauliflower w/ Creamy Leek Sauce
- 1 Cauliflower (or half a large one)
- 1 Leek
- 1 Cup of Sour Cream (or vegan version)
- Olive Oil
- Fresh Dill (or other herb)
- Pepitas (freshly toasted)
- salt and pepper to taste
Instructions
The Sauce
- Chop and sauté the whole leek in a little olive oil. Once it's cooked down and the green parts are soft, let it cool down.
- Add the leeks to the blender and puree with the sour cream. Add a little oil if needed.
Roasted Cauliflower
- Break the cauliflower into little florets, lightly coat with olive oil, sprinkle with salt and pepper, and bake in the oven at 400 degrees for about 25 minutes.
- Spread the sauce on a plate, and top it with cauliflower. Then add flavors like fresh dill, toasted pepitas and other seasonings.
