Red Cabbage Coleslaw Recipe
A simple, crunchy and delicious coleslaw.

Ingredients
- 1/2 head Red Cabbage
- 1/2 Bunch Parsley
- 3 Carrots (shaved)
- 2 Tbsp. Mayonnaise
- 1 Tbsp Dijon Mustard
- 1 Tbsp. Olive Oil
- Juice of 1 Lemon
- Small Handful of almonds, about 20-30
- Chili Flakes
- Turmeric
- Black Pepper
- 1/4 Tsp. Sea Salt
Instructions
- Shave the cabbage very thin, preferably with a mandoline.
- In a bowl, pour the olive oil over the cabbage and carrots, sprinkle the salt.
- Massage the cabbage.
- In a little bowl mix the mayo, mustard, and lemon juice. Pour it into the cabbage and mix well.
- Chop the parsley and mix in with the cabbage.
- Chop the almonds, they'll be all different sizes. Sauté with a little avocado oil, until they're warm and browned, then sprinkle some chili flakes and turmeric. Stir for about half a minute.
- Throw the hot almonds on top of the cabbage.
- Add some thinly sliced green onions if you like.
