Parsley Avocado Dip

Most people use cilantro in their guacamole or avocado dressings! This week we had beautiful big bunches of parsley! I am loving this recipe, it’s fresh and delicious!

Ingredients:

  • 3 Avocados

  • 2-4 lemons

  • 1 bunch of parsley

  • paprika

  • salt

  • Olive Oil

If you’re squeezing the lemons by hand, you can use about 4 of them. If you’re using a lemon juicer, 2 lemons is likely enough. Just go with your taste preferences. I used about 1/4 cup of olive oil. This dip is thick, smooth and delicious. I dip my raw carrots in it for breakfast!
