Lettuce Soup aka Salad Soup
We’re celebrating the beautiful baby lettuces from County Line Harvest, that have just come back into season. It’s like a lettuce party for us. That’s what I think of when I see freckled romaine, because it reminds me of confetti. Just look at these little beauties in the field.
I began by making some salad dressing, and then I turned it into a soup. Lettuce soup is one of the tastiest soups I’ve ever had.
Starting with :
Juice of 5 limes
1/2 cup olive oil
onion green tops
1/4 bunch of fresh dill
1/2 teaspoon salt
1/4 tsp. black pepper
Blend the ingredients for a salad dressing. And if you want to make a lettuce soup. Here’s what you can do.
Add 1/4 cup more olive oil
More salt and pepper to taste
Then pack the blender with as much lettuce as you can. Once you blend it all, you’ll have more space and you can add more lettuce if you want to. Blend and serve warm or chilled. If you let the vitamix run long enough it will be perfectly, lightly warm. I had a lot of lettuce, so feel free to adjust how much lime juice you use for how much lettuce you have. You can also use almost any fresh herb you want to. Last week I used marjoram, this time it was dill.
