Celery Root and Tomato Soup
Part of the fun of making soup with your CSA bundle, is to use what you have, and adjust the amounts of ingredients to your taste preferences. I’ll share with you what I did here, and you can play with this idea as you wish.
Celery Root and Tomato Soup
What I love about this soup, is it tastes and feels like a creamy tomato soup. Though, instead of using dairy, we use celery root to give it a little more flavor and creaminess.
Ingredients
- 1 medium or large size celery root
- 1 Basket of cherry tomatoes
- 1 pepper of choice
- Salt and Pepper to taste
- Torpedo Onion
- Fresh Basil
- Fresh or Dried Oregano
Instructions
- Cut the outer skin from the celery root, then cube the root in pieces.
- Place them in your soup pot with some water to cover the top of the celery root. Add chopped onions and pepper of choice. If you use a spicy pepper like I did, wash the seeds out and just use a small portion of the pepper. Then add your cherry tomatoes. You only need to pluck the little branch off the top of the tomatoes.
- Cover the pot and simmer for 45 minutes. Meanwhile, I like to take a wooden spoon and smush down the tomatoes, as it’s cooking.
- Once the celery root is cooked through, you can turn off the heat and let the soup cool down.
- Blend the soup in a high speed blender, and add fresh basil, oregano, and salt.
- Top it off with seeds, pine nuts, black pepper, olive oil, or whatever inspires you in the moment. I’m sure it will come out beautifully!
