Kohlrabi Fritters
It’s not often I share a fried food, but sometimes it’s fun, as long as we use a healthy cooking oil. I only use organic avocado oil or algae oil. This recipe makes use of a few different vegetables for more flavor and color.

Kohlrabi Fritters
A delicious and colorful vegetable fritter.
Ingredients
- 1 Bunch Kohlrabi
- 2 Carrots
- 1 Large Egg or Flax Seed Equivalent
- 2 Tbsp. Flour
- A few slices of onion
- A little bit of shaved cauliflower or romanesco (optional)
- Cooking Oil (I use Organic Avocado Oil or Algae Oil)
- Sea Salt
- Black Pepper
- Garlic Powder
- Yogurt
- Fresh Herbs and Greens for plating
Instructions
- Cut or shave the skin of the kohlrabi. Then grate it.
- Put the grated kohlrabi in a nut milk bag and squeeze the juices out as best as you can. Then wrap a clean towel around it and soak up more juice.
- Grate 2 carrots and add it to the kohlrabi. You can also add a little bit of shaved cauliflower or romanesco. Not too much, just enough to add some more color and flavor. Then add some onion. A little bit of green onion or a few thin slices of red onion.
- Heat some cooking oil in a large pan on medium heat. I've seen recipes say to use 1 cup of cooking oil, but I don't agree with that. Don't use more than 1/4 cup.
- Whisk 1 egg in a large bowl or use the flax seed vegan equivalent. Add the kohlrabi to the bowl and mix. Sprinkle in the flour. Then sprinkle in sea salt, pepper, and garlic powder. Mix.
- Place the mixture in the palm of your hand like a ball, and then flatten it a little. Add it to the pan with hot oil.
- Cook partially covered for about 3 minutes. Then flip them over and repeat. I use a rubber spatula and tongs to carefully flip them over.
- Mix some plain yogurt in a little bowl. Chop fresh cilantro or parsley and add some oil to it. Then pour it over the yogurt. Sprinkle on some chili flakes.
- Add a dollop of yogurt to each fritter. Plate with fresh greens and herbs.
Notes
You can add russet potato to this. Use equal amount of potato to kohlrabi, and add 1 more egg and 2 more tablespoons of flour.
