Crispy Peas & Potatoes Recipe w/ Red Frill & a Lemon Dill Aioli
The time of season when we have fresh peas is one of the best times. It’s also a little bit of a sad time where we start to transition out of the gorgeous Winter greens from County Line Harvest. We get a little of both this week in the start of April, with red frill in the mix.

Crispy Potatoes & Peas w/ Lemon Dill Aioli
Fresh pea season is one of the best times of year!
Ingredients
Main Recipe
- 1 Lb. Russet Potatoes
- 1/2 Cup Fresh Peas
- 1/2 to 1 Bunch of Red Frill
- 1/4 Tsp Red Vinegar
- 1 Tbsp Olive Oil
- Avocado Oil for cooking potatoes
- Black Pepper and garnishes
Lemon Dill Aioli
- 3 Spoonfuls of Mayonnaise (vegan or primal kitchen)
- 2 Spoonfuls of Dijon Mustard
- 1/2 a Lemon (juiced)
- Fresh or Dry Dill

- Preheat Oven to 400 Degrees
- Peel potatoes, and cut them into chunks.
- Take a clean towel and do your best to squeeze the juice out of them.
- Pour some avocado oil and toss to coat the potatoes evenly.
- Lay them out on a pan with parchment paper and sprinkle your choice of seasoning. I used a Peruvian spice mix.
- In a little bowl, add the olive oil and red wine vinegar along with a little squeeze of lemon juice and mix. Then coat the red frill leaves.
- The potatoes will be done in about 30-40 minutes. Check on them and flip them around so they don't stick to the bottom.
- Place the red frill on a serving plate.
- Remove the peas from their pods while the potatoes cook, and get about 1/2 a cup of fresh peas. Cook them in a small pan with just a little bit of water, covered fora few minutes. Then remove the lid and let the water absorb. Then add a little cooking oil or butter to the pan, and cook them crispy. This part is optional. It's good enough to have just steamed them.
- Place the warm potatoes over the red frill. Then top it off with peas and more red frill. Add a little onion and fresh herbs.
- Top with black pepper, freshly sliced radishes, onions, herbs.....
Lemon Dill Aioli
- Mix ingredients well. Add as much dill as you'll enjoy.
