Broccoli Mint Soup Recipe
Have you have ever planted one mint plant in your garden and it took over everything?! I have a few times. It’s a very useful and enjoyable herb.

Broccoli Mint Soup
Broccoli and mint are a great combination. This soup is nourishing, and has a satisfying twist with mint. The nuts on top give it a little crunchy protein.
Ingredients
- 1 Pound Broccoli
- 3 Cups of Water or Vegetable Broth
- 1/4 Pound of Spinach, Chard, or Kale
- 1/2 to 1 Cup of Mint
- 1 Large Spring Onion
- 3 Tbsp. Nutritional Yeast
- Juice of 1/2 a Lemon
- 1 Tsp. Lemon Rind (approximate)
- 2 Tsp. Rice Vinegar
- 1/4 Tsp. Sea Salt
- Black Pepper (to taste)
- Avocado Oil
- 1/4 Cup Almonds
- 1/4 Cup Pistachios
- 3-4 Pinches Chili Flakes
- 1 Tbsp. Olive Oil
Instructions
- Chop the spring onion from bulb to top. Sauté in a pan with avocado oil for 2 or 3 minutes.
- Chop the broccoli, including the stem. Add it to the pot with 3 cups of water or broth. Bring to a boil and simmer for about 8 minutes. Depending how big your broccoli pieces are. Let it be cooked through, but not too soft. (Add some fresh oregano if you have it.)
- Add the broccoli to a blender with some of the broth. Save some of the liquid so that you can add it as you go to get the consistency that you want.
- Add the lemon rind and mint. Blend and taste. See if you prefer more mint. Then add your greens of choice. Blend it so that it's smooth but still has a little texture, and add more of the broth or water from the pot if it's needed.
- Pour the soup into a serving bowl or pot. Add nutritional yeast, lemon juice, rice vinegar, salt, and pepper. Then stir well.
- Chop the nuts, then warm them up in a pan with a little avocado oil until they're brown. Put them in a bowl with a little olive oil, chili flakes and chopped mint. Add it to the top of the soup.
Notes
1 pound of broccoli has almost 13 grams of protein, while this nut mix also has 13 grams of protein. Although you might not eat this all in one sitting, it's nice to know the full recipe has about 26 grams of protein.
You can also double up on the nuts and enjoy them as a snack on the side. 1 pound of broccoli also has close to 12 grams of fiber.
Broccoli is also very hydrating!
Mint is great for digestion.
