Creamy Broccoli Leek Soup Recipe

This creamy broccoli leek soup can be made with coconut cream or cream. Similar to potato leek soup, but with the addition of broccoli. In todays bundle we also have tokyo turnips and arugula. They make an excellent addition to this soup, whether you add some fresh arugula while blending the soup, or you add arugula pesto on top. Either way, it’s a perfect way to enjoy soup that’s packed with nutrition.

Cream of Broccoli Leek Soup Recipe

A creamy broccoli soup garnished with turnips and arugula pesto.

Ingredients

  • 1 Pound of Broccoli (heads and stem)
  • 2 Yukon Gold Potatoes
  • 2 Small Carrots
  • 2 Cups Vegetable Broth
  • 1/2 Cup of Water
  • 1 Cup Cream or Coconut Cream
  • 1/2 Tsp Lemon Pepper
  • 1 Cup Fresh Parsley
  • 1 Bunch of Leeks
  • 1 Tsp. Mustard Seeds
  • 1 Tbsp. Toasted Sesame Seed Oil
  • 1 Lemon

Instructions

  1. Slice tokyo turnips very thin, place them in a bowl, and squeeze plenty of lime or lemon juice on them. Then add a little salt, and let them soak.
  2. Sauté chopped leeks in a little avocado oil on low to medium heat for a few minutes. Add the mustard seeds.
  3. Clean and chop the broccoli florets and stems. If the end of the stem is more fibrous, set that aside, but do use the stem!
  4. Wash and chop the carrots and potatoes. Cut the potatoes in small pieces so that they cook in the same timing as the broccoli.
  5. Add all veggies, vegetable broth, and lemon pepper to the pot. Once it gets to a simmer, cook for 10 minutes.
  6. Add all ingredients from the pot plus fresh parsley to a blender. Stainless steel is best, so it's not blending hot in plastic. Otherwise, cooling it down first works too. Then add the water and cream. Blend on medium speed, so that it's blended well, but with a little bit of texture.
  7. Add lemon rind from 1 lemon, and then squeeze the juice. Add toasted sesame oil. Then blend on medium speed for a little bit, until it's mixed in. Don't over blend. If you do, it's ok, it'll just be creamy, but I like this one with a little texture.
  8. Top the soup off with arugula pesto and fresh slices of the soaked turnips.

Notes

To make arugula pesto just blend some arugula with a little oil and some lemon or lime juice. It's a nice addition on top of broccoli soup.
