Beautiful French Green Lentils

A recipe perfect for summer season, we use Larry Kandarians french green lentils, and a medley of flavors. You can mix this up based on what ever veggies, types of tomatoes, or herbs you have. I also added something special on top. Crispy tomato skins. Find out how I made them, at the bottom of this recipe!

A recipe perfect for summer season, we use Larry Kandarians french green lentils, and a medley of flavors. You can mix this up based on what ever veggies, types of tomatoes, or herbs you have. I also added something special on top. Crispy tomato skins! Here’s one way that I think you’ll really enjoy!

Ingredients

  • 1 Cup Green Lentils
  • 4 Cups Water
  • 1/2 basket Mountain Magic Cherry Tomatoes
  • 1 lb or less, Summer Squash
  • 1 Potato
  • Basil or other Fresh Herbs
  • 1/2 Bunch of Spinach (more or less)
  • 1 Lemon
  • Chives
  • 1/4 or 1/2 chopped Onion
  • 3 Stalks of Celery
  • Olive Oil (I used garlic infused oil)
  • 1 Tsp. Yellow mustard Seeds
  • 1 Tsp. Dill Seeds
  • Salt and Pepper (to taste)

Instructions

  1. Stir fry chopped onion and celery in your pot with a little olive oil. You can also add fresh ginger and/or garlic if you like.
  2. Once they’re cooked down, add mustard and dill seeds, and toast them with the onions.
  3. Rinse the lentils, and add them to the pot. Stir them around and let them heat up, then add 4 cups of hot water, and chopped tomatoes. Let the lentils simmer for about 40 minutes with some lemon slices, then add chopped potatoes.
  4. Let simmer, and add your squash, fresh herbs, and spinach. Simmer for about 10 more minutes. I ended up getting really busy and let this simmer for an hour and a half total, and it was wonderful.
  5. Add salt and pepper to taste.

Crispy Tomato Skins

I picked out all the tomato skins that floated to the top of the pot. Make sure to do this carefully with a fork. Set the skins aside, wash them, and then fry them in a little pan with oil until they’re crispy. A little garnish like this makes a really nice difference, and is really enjoyable.
