Avocado Cucumber Soup

I love a cool soup in the summer time. This is simple and feels balancing. You can add your fresh herbs of choice, depending on what you have available.


2 Haas Avocados

2 Cucumbers

2-3 Sprigs of Green Onions

Small handful of spinach (a little is enough for this recipe)

Juice of 1 lemon (meyer or regular)

Salt and Pepper to Taste

Olive Oil

Fresh Herbs of Choice


It helps to have a vitamix but any blender will be fine. Blend all of the ingredients except olive oil and herbs. Then blend a bundle of fresh herbs with enough olive oil to blend easily, and use it to drizzle on top of the soup.

That’s it! Easy! You can also sprinkle a type of pepper spice on top.
