Tomatillo Salad Dressing

You can use a different vinegar for this, but if you haven’t tried our persimmon vinegar yet, I can highly recommend it, I love the flavor! It’s a really yummy salad dressing and we poured it over our cauliflower soup to add more flavor!

Ingredients:

  • 1/2 cup of olive oil

  • 1/4 Cup Persimmon Vinegar

  • 1/2 Cup of Water

  • Half pound of Tomatillo (or a little more is ok)

  • 1/2 cup of parsley or cilantro or try an herb you have available!

  • 1 tsp salt

  • 1/4 tsp Black Pepper

  • 2 tsp sumac

Directions:

  1. Preheat the oven to 450.

  2. Remove the outer leaf layer of the tomatillos and wash them. Cut them in half and place them on the baking tray.

  3. Cook them in the oven until they are cooked and mushy, and a little brown on top.

  4. Then place all ingredients in the blender and blend it all until it’s smooth!
