Spaghetti Squash Recipe
This is such a wonderful way to enjoy this most interesting type of squash. You’ll crave it again!

Spaghetti Squash Recipe

Warm, comfy, and a healthy way to enjoy something that's similar to having pasta.
Ingredients
- 1 Whole Spaghetti Squash
- Small Handful of Cherry Tomatoes, or 1/2 a Beefsteak Tomato
- 1/2 Cup to 1 Cup of Kale
- 3 Tsp. Chili Crunch or Chili Crisp (depending on how spicy your batch is)
- (optional) Up to 1 Cup of Cheese (freshly shredded, can be mixed types)
- Fresh Parsley
- Onions and Garlic
- Avocado Oil
- Hemp Seeds
- Fresh Pepper of Choice (sweet to mild variety)
Instructions
- Preheat the oven to 400 degrees. Cut the squash in half lengthwise. Scoop out the seeds. Rub a thin layer of oil on the cut sides. Place the squash cut side down onto a baking sheet. Puncture some holes on the top. (Some people cook the whole squash for 10 minutes before they cut it in half, so that it softens and is easier and safer to cut.)
- Cook for about 40 minutes, meanwhile get the ingredients ready. Chop veggies and shred cheese. Chop the kale into really little bits.
- Sauté a little bit of chopped onion and garlic. Then add the kale for a minute.
- Once the squash is ready, take it out of the oven and carefully flip them over. Scrape a fork into it and pull out the strings, keeping them inside of the shell. Carefully mix in the onions, garlic, kale, and a little bit of oil.
- Add a spoonful of chili crunch oil to each side of the squash and mix it in.
- Top the squash with slices of pepper, then add the cheese.
- Bake the squash for 10 more minutes.
- Remove the squash and turn off the oven.
- Sprinkle hemp seeds on top. Then add fresh tomato and parsley.
- Continue to add a little more chili crunch oil on top. Careful not to add too much if you have a spicy one. The one I use is very mild and flavorful.
Notes
The hemp seeds and chili crunch oil really makes this different from other spaghetti squash recipes. The flavor is really nice and the hemp seeds add some extra nutrition and a yummy texture. If you don't eat cheese or vegan cheese, sprinkle in some nutritional yeast on top and add more hemp seeds. Possibly some chopped almonds too.
