Romanesco w/ Pistachio Sauce
Baked romanesco with a creamy and flavorful pistachio sauce.

Ingredients
- 1 Romanesco
- 2 Tbsp. Avocado Oil or Butter
- Chili Flakes
- Capers
- Lemon
- Cilantro Leaves
Pistachio Sauce
- 1/4 Cup Pistachios
- 1/4 Cup Water
- 1/4 Cup Olive Oil (lemon infused or regular)
- 3/4 Bunch of Cilantro
- Sea Salt to Taste
- Juice of 1 Small Lemon
Instructions
- Preheat oven to 350 degrees.
- Brush oil or melted butter over the top of 1 small head of romanesco.
- Bake for 30-35 minutes.
- After making the sauce, take what's left of the cilantro leaves and finely chop them. Cover in olive oil.
- Spread pistachio sauce on a plate, add the romanesco.
- Add cilantro on top, chili flakes, and a spoonful of capers.
- Blend sauce ingredients in a high speed blender until smooth and creamy.
