Romanesco w/ Pistachio Sauce

Baked romanesco with a creamy and flavorful pistachio sauce.

Ingredients

  • 1 Romanesco
  • 2 Tbsp. Avocado Oil or Butter
  • Chili Flakes
  • Capers
  • Lemon
  • Cilantro Leaves
Pistachio Sauce
  • 1/4 Cup Pistachios
  • 1/4 Cup Water
  • 1/4 Cup Olive Oil (lemon infused or regular)
  • 3/4 Bunch of Cilantro
  • Sea Salt to Taste
  • Juice of 1 Small Lemon

Instructions

  1. Preheat oven to 350 degrees.
  2. Brush oil or melted butter over the top of 1 small head of romanesco.
  3. Bake for 30-35 minutes.
  4. After making the sauce, take what's left of the cilantro leaves and finely chop them. Cover in olive oil.
  5. Spread pistachio sauce on a plate, add the romanesco.
  6. Add cilantro on top, chili flakes, and a spoonful of capers.
  1. Blend sauce ingredients in a high speed blender until smooth and creamy.
