This salad is delicious and nourishing!
Ingredients
Poppy Seed Lemon Dressing
- 1/4 Cup Olive Oil
- Juice of 1 Lemon
- 1/2 Tbsp Lemon Zest
- 1/2 Tbsp. Dijon Mustard
- 1 Tsp Honey
- 1 Tbsp. Poppy Seeds
- 1/4 tsp sea salt
- 7 Threads of saffron
- 1 Red Cabbage
- Tokyo Turnips
- Cilantro
- Olive Oil
- Sea Salt
- Cilantro
Instructions
- Mix all of the ingredients, except saffron.
- Pour the dressing into a little pot.
- Use a mortar and pestle to break up the saffron and then add it to the pot.
- Warm up the dressing on low heat, stirring occasionally. Don't let it boil. Do let it get hot.
Salad
- Peel the outer leaves of the cabbage. Cut it into quarters, then thinly shave the cabbage with a mandoline.
- Put the cabbage in a large salad bowl. Drizzle olive oil over the cabbage, and sprinkle salt. Massage the cabbage to break it down.
- Take 1-3 Tokyo Turnips, and shave them thin. Or cut them into quarters.
- Place the turnips in the bowl with the cabbage, and add some fresh cilantro on top.
- Pour the hot dressing all over.
- Sprinkle with black sesame seeds, and squeeze a little lemon juice on top.
Notes
Depending on the size of your cabbage, you can double the dressing recipe, and add more turnips. Avocado and carrots are also a perfect addition to this salad.
