Red cabbage Salad w/ Warm Poppy Seed Lemon Dressing

This salad is delicious and nourishing!

Ingredients

Poppy Seed Lemon Dressing
  • 1/4 Cup Olive Oil
  • Juice of 1 Lemon
  • 1/2 Tbsp Lemon Zest
  • 1/2 Tbsp. Dijon Mustard
  • 1 Tsp Honey
  • 1 Tbsp. Poppy Seeds
  • 1/4 tsp sea salt
  • 7 Threads of saffron
  • 1 Red Cabbage
  • Tokyo Turnips
  • Cilantro
  • Olive Oil
  • Sea Salt
  • Cilantro

Instructions

  1. Mix all of the ingredients, except saffron.
  2. Pour the dressing into a little pot.
  3. Use a mortar and pestle to break up the saffron and then add it to the pot.
  4. Warm up the dressing on low heat, stirring occasionally. Don't let it boil. Do let it get hot.
Salad
  1. Peel the outer leaves of the cabbage. Cut it into quarters, then thinly shave the cabbage with a mandoline.
  2. Put the cabbage in a large salad bowl. Drizzle olive oil over the cabbage, and sprinkle salt. Massage the cabbage to break it down.
  3. Take 1-3 Tokyo Turnips, and shave them thin. Or cut them into quarters.
  4. Place the turnips in the bowl with the cabbage, and add some fresh cilantro on top.
  5. Pour the hot dressing all over.
  6. Sprinkle with black sesame seeds, and squeeze a little lemon juice on top.

Notes

Depending on the size of your cabbage, you can double the dressing recipe, and add more turnips. Avocado and carrots are also a perfect addition to this salad.
