Golden Beet Soup Recipe
This recipe is very simple. It’s best enjoyed with flavorful toppings, and the bright citrus flavor with the gold beets is very uplifting. Making this a wonderful way to enjoy the high nutritional benefits of beets.

Golden Beet Soup
With lovely baby beets, this soup lets you soak up the nutrition in this wonderful vegetable.

Ingredients
- 1 Bunch of Baby Beets
- 1/2 Cup of Water
- 1/2 an Orange (I used cara cara)
- Oregano and Rosemary
Instructions
- Cut the top off of the beets, and rinse them. Place the beets with the skin on in a pot of boiling water.
- Simmer until they're cooked through, about 30 minutes. Check it at 20 minutes for small beets.
- Take the beets out with a spoon, and let them cool enough so that it's comfortable for your hands to peel the skin. Slide the skin off.
- Add the beets to a blender with 1 cup of water (I used the water they simmered in). Add juice of 1 medium size orange. Slice 2 thin cuts of skin (not super thin just not big), and add it to the blender.
- Blend until smooth. Add more juice of the orange if needed. The flavor will be bright and cheerful.
- Top the soup off with sour cream, orange slices, rosemary, and oregano. I use rosemary flowers when I'm lucky enough to have some in the garden. The flavor of the flower is delicate with that comforting rosemary taste.
Notes
You can add a little rosemary and oregano to the blender, but I prefer to put a little on top.
