Arugula Salad w/ Sunflower Lemon Dressing Recipe
I made this salad with arugula and it’s wonderful, though this dressing can be used in any green salad or combination of greens.

Arugula Salad w/ Sunflower Lemon Dressing
A light, bright dressing for the flavorful and super healthy arugula! This salad is great with any type of lettuce too.
Ingredients
Dressing
- 6-7 Tbsp. Olive Oil
- 3 Tbsp. Avocado Oil
- 6 Tbsp. Lemon Juice (regular or meyer)
- 1 Tsp. Rice Vinegar
- 2 Tbsp. Roasted Sunflower Seed Butter
- 1/8 to1/4 Tsp. Sea Salt
- 1/2 Tsp. Onion Powder
- Black Pepper (to taste)
- 1/2 Tsp. Chili Flakes
- 1 Tsp. Maple Syrup
Salad
- 1/4 lb to 1 lb Arugula Leaves (or 1 head of lettuce)
- Roasted sunflower seeds
- Shaved Fennel
- Radish

Dressing
- Blend all dressing ingredients. Blend the chili flakes last, so that they only blend long enough to mix in the dressing, but they're still flaky.
- To make sunflower butter yourself, just put a bag of hulled sunflower seeds into a food processor and blend it until it forms a butter consistency. It will crumble at first and then just keep it going.
Salad
- Wash and dry the arugula leaves.
- Take a head of fennel and finely shave it. Use only as much as you need depending how much arugula you have.
- Pour the dressing on top and add a little bit of shaved radish, lemon slices, a little more chili flakes on top, and sunflower seeds.
